Ingredients
  

  • 1 pound ground beef
  • 1 cup yellow onion chopped
  • 1 cup bell peppers chopped (mix of red and green)
  • 3 cloves garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup beef broth
  • 1 cup provolone cheese shredded
  • 2 cups frozen tater tots

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add onions and garlic, cooking until they soften, about 3-4 minutes.
  4. Stir in bell peppers, Worcestershire sauce, salt, and pepper, cooking for an additional 4 minutes.
  5. Pour in beef broth and simmer for a few minutes, allowing the flavors to meld.
  6. Transfer the beef mixture into a greased 9x13-inch baking dish.
  7. Top the beef mixture with tater tots, arranging them in a single layer.
  8. Sprinkle the shredded provolone cheese over the top of the tater tots.
  9. Cover with aluminum foil and bake for 20 minutes, then remove the foil and bake an additional 10 minutes until golden brown.
  10. Remove from the oven and let it cool for a few minutes before serving.

Notes

For leftovers, simply reheat in the oven to keep the tater tots crispy. This casserole can be made ahead and stored in the fridge for up to two days before baking.
