Ingredients
  

  • 1 pound ground beef
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes canned or fresh
  • 1 packet taco seasoning
  • 6 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions for garnish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  3. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for another 5 minutes.
  4. Spread half of the beef mixture in a greased 9x13-inch baking dish.
  5. Tear three corn tortillas and layer them over the beef mixture.
  6. Add half of the shredded cheddar cheese on top of the tortillas.
  7. Repeat the layering process with the remaining beef mixture, tortillas, and top with the rest of the cheese.
  8. Bake in the preheated oven for 25-30 minutes until the cheese is melted and golden.
  9. Garnish with chopped green onions before serving.

Notes

For best results, let it cool slightly before cutting, so it holds its shape. An excellent dish for potlucks and easy to reheat.
