Ingredients
  

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1 can black beans 15 oz, rinsed and drained
  • 1 cup diced tomatoes fresh or canned
  • 1 small onion diced
  • 1 bell pepper diced (any color)
  • 1 packet taco seasoning or homemade
  • 1 cup tortilla chips
  • Sour cream for serving
  • Sliced green onions for garnish

Method
 

  1. In a large skillet, cook the ground beef over medium heat until browned, about 5–7 minutes.
  2. Add the diced onion and bell pepper, cooking for an additional 5 minutes or until softened.
  3. Stir in the taco seasoning and black beans for 1-2 minutes until everything is well combined and fragrant.
  4. Add the diced tomatoes, stir, and let simmer for about 5 minutes to meld the flavors.
  5. Preheat your broiler while you prepare to layer the dish.
  6. Transfer the beef mixture to a broiler-safe dish and sprinkle the shredded cheese evenly on top.
  7. Broil for 2-3 minutes, or until the cheese is completely melted and bubbly.
  8. Remove from the oven and top with tortilla chips, sour cream, and sliced green onions before serving.

Notes

For a make-ahead option, prepare the beef mixture the day before and keep refrigerated. Just heat and top with cheese before broiling.
