- Add the diced onion and bell pepper, cooking for an additional 5 minutes or until softened.
- Stir in the taco seasoning and black beans for 1-2 minutes until everything is well combined and fragrant.
- Add the diced tomatoes, stir, and let simmer for about 5 minutes to meld the flavors.
- Preheat your broiler while you prepare to layer the dish.
- Transfer the beef mixture to a broiler-safe dish and sprinkle the shredded cheese evenly on top.
- Broil for 2-3 minutes, or until the cheese is completely melted and bubbly.
- Remove from the oven and top with tortilla chips, sour cream, and sliced green onions before serving.
Notes
For a make-ahead option, prepare the beef mixture the day before and keep refrigerated. Just heat and top with cheese before broiling.
